/ Handoutf the buzzwords rattling around the restaurant industry of late, sustainability is the one you’ll likely come across most frequently. But unlike a lot of the jargon, which amounts to little more than marketing fluff, this one really matters.
From working with local producers to removing plastic from their supply chains, there’s a lot restaurants in London and beyond can do to reduce their carbon footprint — and the ones leading the charge to do so are well worth celebrating.
That’s exactly what the Michelin Guide’s Green Stars aim to do. The accolade recognises restaurants that not only consider their own impacts on the environment but, in the words of the Guide, “also address issues related to ethics and wellbeing, as well as contributing to local, national or global charitable and educational projects”.
As always with Michelin, the specific boxes that need ticking to win a Green Star aren’t made public, and while inspectors will consider everything from provenance of ingredients to waste disposal methods, they are “looking for those at the top of their game when it comes to their sustainable practises”.
The Green Star was a new initiative for 2021, and featured four London restaurants: Petersham Nurseries Cafe in Richmond, OXO Tower Brasserie in Southwark, Silo in Hackney and the now-closed Tredwells in Covent Garden. All of them, bar Tredwells (which closed in 2021), have kept their Green Star for 2023. Although no new London restaurants were added to the list this time round.
